I’ve been making Zucchini Slice for YEARS. It’s so easy, yummy and even freezes well. This is the Simple version of the recipe, however I often add a whole heap extra grated vegetables to the mix! It’s a perfect meal in itself or you can use it as a side dish, if you’re ever asked to bring something to a barbeque this is so easy to whip up and perfect hot or cold.
375g Zucchin, grated (approx 2-3 large)
1 Medium Onion, finely diced
4 Rashes Bacon, diced (I use ham)
1 Cup Cheese, Grated
1 Cup Self Raising Flour
1/2 Cup Olive Oil
1/2 Cup Milk
5 Eggs, lightly beaten
1. Preheat oven to 180 degrees celsius (160 degrees fan forced)
2. Combine all ingredients and pour into ovenproof dish (I line with baking paper)
3. Bake for approximately 45 minutes or until golden brown and set in the middle.
4. Serve with fresh salad!
