I’ve been making Zucchini Slice for YEARS. It’s so easy, yummy and even freezes well. This is the Simple version of the recipe, however I often add a whole heap extra grated vegetables to the mix! It’s a perfect meal in itself or you can use it as a side dish, if you’re ever asked to bring something to a barbeque this is so easy to whip up and perfect hot or cold.




375g Zucchin, grated (approx 2-3 large)

1 Medium Onion, finely diced

4 Rashes Bacon, diced (I use ham)

1 Cup Cheese, Grated

1 Cup Self Raising Flour

1/2 Cup Olive Oil

1/2 Cup Milk

5 Eggs, lightly beaten

1. Preheat oven to 180 degrees celsius (160 degrees fan forced)

2. Combine all ingredients and pour into ovenproof dish (I line with baking paper)

3. Bake for approximately 45 minutes or until golden brown and set in the middle.

4. Serve with fresh salad!

  1. Hello, I’ve used your recipe three times now. Dinner last night a disappointment. Quiche didn’t set. Longer cook time made no difference. I’ve used gluten free flour each time, so it’s probably not that. Mixture seemed very runny with just three eggs… Do you use full cream milk? Cannot think what I erred in. Previous two quiches, while needed longer cook time were fine. This is a tasty meal but not when it isn’t set. Would appreciate your input. Thanks CimmieS

      Oh no! That’s very strange! I’ve been making this recipe for over 20 years and never had an issue! I’ve used both full cream and skim milk and it hasn’t made a difference for me. Did you use the same method every time and only the last time it didn’t set?


      1. Thank you Champagne, yes used same method & amounts. Asked several friends who cannot understand what occurred. Plan B … will make again next week & await a nicely set quiche. CimmieS
