This week’s Budget Family Dinner is Salmon Cakes. A quick, healthy and meat free meal that is the perfect way to use up left over vegetables – I always cook some extra when making one meal and keep aside for the next night to make these! I bake mine in the oven but you can shallow fry which is the traditional method, and you can also make these into little balls for the kids (but I would add an egg to help them keep their shape). You can also add left over cooked rice to the mix to beef up the patties and make them go further!
These are Aldi products and pricing, but you can find similar in other supermarkets on sale or home brands.
Steam the peeled potatoes and carrots and mash together, mix through defrosted spinach and drained salmon. Mould into 8 even balls and place on a baking sheet, press down to make patties. Give a light spray with olive oil and bake for 20mins in 180 Degree Celsius oven. Heat frozen vegetables in microwave and serve with patties, I like to add a lemon wedge!
